Combine the flour and butter in a food processor until the mixture resembles breadcrumbs. Add the remaining crust ingredients and process until the mixture forms a ball. Form a disk, wrap in plastic and refrigerate for 2 hours. Preheat the oven to 425F. Roll out the dough and place in a 9-inch pie pan. Sprinkle the semolina over the base of the pie crust. Place the plums in the base and sprinkle with the sugar. Bake for 15 minutes. Reduce the temperature to 350F and bake for 15 minutes longer.
